Job Description

  • To ensure that all stocks are kept under optimum conditions to maintain the highest standard of quality and freshness and are that they are used correctly so that wastage is kept to a minimum.
  • To ensure that all mise-en-place is always freshly prepared and on time.
  • To ensure that all dishes are being prepared to the correct recipe and to the correct quantity.
  • To ensure that all dishes reach the hot plate correctly garnished, at the correct portion size and presented on the prescribed serving dish in the prescribed manner.
  • To ensure that the preparation of food is hygienic and that the kitchen is being kept clean and tidy at all times – adhere to a “clean as you go” discipline.
  • To ensure that junior cooks and trainees receive the right training and optimum guidance.
  • To ensure that any anticipated shortages are communicated promptly to the Chef or Sous Chef.
  • To report any faults or defects to management, paying particular attention to any safety or health hazard.
  • To ensure that company and statutory hygiene standards are maintained.
  • To ensure that all staff under your control are treated fairly and with courtesy.
  • To deputise in the Chef and Sous-Chef's absence and take charge of the kitchen when directed to do so.
  • Constant input into daily specials, new menu items and other creative aspects of the menu, in conjunction with the Chef and Sous Chef.
  • To ensure that the assigned station is left CLEAN, with a reasonable mise en place stocked for the next shift and that the prep lists are updated for the next shift and checked by Sous-Chef or Chef.
  • Respectful co-operation with All staff members in working toward our common goal; The Customer, is a priority
  • To complete assigned tasks on posted cleaning schedule
  • Must be able to work for long hours, standing up, and lift weights up to 50 lbs.
  • To attend training courses and seminars as and when required.
  • May be asked for assistance with storm preparations of the restaurant, in conjunction with your home preparations.
  • To ensure, with all kitchen staff, the maintenance of a CLEAN and hygienic workplace.
