Job Description

We are seeking a driven and creative hands-on leader with 4* management experience, to join our team at Morritt’s Resort. Candidates must be experienced and have shown an ability to oversee multiple outlets, develop new and creative food and beverage concepts, while having been successful at food and beverage controls, both front of house and back of house. The successful candidate will be the face of the department and have the knowledge to guide and improve each and every service. Past successful experience is mandatory in developing a team that has been together for some time, but is looking for leadership and training and development. The F and B Manager is expected to be on the floor taking an active part in service 75% of the time as this is not an office position. Taking part in service- engaging both staff and guests throughout the service is a priority. Evenings, weekends and holidays will be required. The successful candidate will also work closely with the Executive Chef and have responsibility to push the kitchen to the next level, in food quality, preparation, and standards. Maintaining proper HACCP standards is a must and the ability to translate your vision to the kitchen staff will be vital.

Job Responsibilities

  • Manages short-and long-term restaurant goals, objectives, policies, and operating procedures; monitors and evaluates operational effectiveness; effects changes required for improvement. Identifies key drivers of success.
  • Ensures restaurant delivers and maintains a maximum level of property-wide service and satisfaction.
  • Facilitates communication throughout the resort by organizing and presiding over regularly scheduled meetings with team members within the restaurant and with other departments in the hotel as appropriate to ensure property wide communication.
  • Ability to maintain excellent relationships with staff and maintain staff and guest confidentiality at all times, maintain calm and professional demeanor in sometimes high pressure situations.
  • High work ethic and self-initiative.
  • Knowledge of local employment laws and regulations.

  • Responsible for hiring, performance management, and employee engagement within the food and beverage team. Provides training opportunities, constructive and positive feedback to team members within area of responsibility. Creates a motivating environment.
  • Effectively manages internal and external guest relations. Responsible for addressing guest and team member issues as appropriate.
  • Conduct effective shift briefings ensuring all staff are aware of VIPs, special occasions, daily specials, product features and property-wide events.
  • Maintains relevant knowledge of industry through continuing education and training.
  • Reviews and assists in the development of menus with the appropriate department staff.
  • Inspects the food and beverage equipment on a regular basis to ensure that the established quality standards are maintained.
  • Is visibly present and engaged in the service areas to maintain contact with clients to ensure satisfaction levels are achieved and takes corrective action when necessary.
  • Advanced technology proficiency in software acumen including Microsoft Office (Excel, Word, Outook), POS systems, online ordering systems.
  • Performs any other job-related duties as assigned.
