Prepare, season, and cook authentic Jamaican dishes in accordance with established recipes, portion standards, and presentation guidelines. Utilize a variety of cooking techniques including grilling, frying, baking, boiling, steaming, roasting, sautéing, and braising to prepare menu items efficiently and consistently. Prepare traditional Jamaican meals such as jerk dishes, curries, stews, rice and peas, seafood dishes, soups, patties, and other Caribbean specialties. Ensure all ingredients are properly prepared, stored, labeled, and rotated in accordance with food safety regulations and company procedures. Maintain consistency in taste, quality, texture, and presentation of all dishes served. Monitor food preparation and cooking times to ensure timely service during busy operating hours. Assist with menu planning, recipe development, and introducing new Jamaican-inspired dishes when required. Maintain cleanliness and sanitation of kitchen workstations, cooking equipment, utensils, storage areas, and food preparation surfaces at all times. Ensure strict compliance with food handling, sanitation, hygiene, and workplace health and safety standards. Inspect ingredients and food products to ensure freshness, quality, and proper storage conditions. Collaborate with kitchen staff and management to coordinate food preparation and maintain smooth kitchen operations. Assist with inventory management, stock rotation, and notifying supervisors of low inventory or supply shortages. Minimize food waste by properly measuring ingredients, monitoring portions, and utilizing kitchen resources efficiently. Operate kitchen equipment safely and report any maintenance or repair needs promptly. Adapt efficiently to menu changes, customer requests, and high-volume service periods. Train or assist junior kitchen staff when required and promote teamwork within the kitchen environment. Ensure all meals are prepared and served in a timely, professional, and customer-focused manner. Support opening and closing kitchen procedures, including cleaning, organizing, and preparing workstations for service. Requirements and Qualifications
Minimum of ten (10) years of proven experience working as a Cook specializing in Jamaican cuisine. Extensive knowledge of authentic Jamaican dishes, traditional recipes, herbs, spices, marinades, and seasoning techniques. Strong understanding of Caribbean food preparation methods and cooking procedures. Experience working in fast-paced restaurant or commercial kitchen environments. Ability to prepare large volumes of food while maintaining consistency and high quality standards. Comprehensive knowledge of food safety, sanitation, hygiene, and kitchen health regulations. Strong organizational and time management skills. Ability to multitask and work efficiently under pressure. Excellent teamwork and communication skills. Ability to follow recipes accurately while also demonstrating creativity in food preparation. Knowledge of menu planning, food costing, and portion control is an asset. Physically capable of standing for extended periods and performing kitchen-related tasks including lifting and handling kitchen equipment. Dependable, punctual, and capable of working with minimal supervision. Flexibility to work evenings, weekends, and public holidays as required. Preferred Skills Experience preparing a wide range of Jamaican and Caribbean specialties. Familiarity with commercial kitchen equipment and operations. Leadership experience supervising kitchen assistants or junior cooks is an asset. Ability to maintain calm and efficiency during high-volume service periods. Working Conditions Fast-paced kitchen and restaurant environment. Exposure to heat, cooking equipment, and prolonged standing. Requires flexibility in scheduling, including weekends and holidays.
