Job Description

The Chief Steward supervises and coordinates activities for stewarding department employees as well as purchases, kitchen supplies, and equipment. This position contributes to the successful operation of the culinary department by ensuring sanitation and food standards are achieved; keeping the back of the house clean and organized.

Responsibilities include but are not limited to

  • Closely work together with the Executive Chef on development of the stewarding department according to divisional objectives.
  • Ensure cleaning schedule is adhered to the required standard.
  • Maintain cleanliness and order of the kitchens, workrooms, storerooms and equipment.
  • Provide support to the stewarding team by coordinating logistics assistance, such as setting up equipment, event set up and breakdowns, clearing garbage as it relates to stewarding.
  • Maintain and document a yearly capital inventory on all kitchen equipment, glassware, silverware, china and report any discrepancies to the Executive Chef.
  • Use the standard operational controls to implement inventory control systems and practices.
  • Ensure food stations are set-up according to specifications.
  • Act as the primary liaison, prepare and distribute all glassware, china, dinnerware, equipment and supplies required for all event functions including buffets.
  • Maintain an inventory of all stewarding equipment, material and supplies. Interface with Maintenance Department on a regular basis and ensure the repairs of all kitchen equipment.
  • Ensure that safety protocols are followed by staff members at all times.
  • Maintain and update material information data sheets (MSDS) on a regular basis for all products.
  • In conjunction with the culinary department, place orders with vendors and suppliers.

Qualifications

  • Minimum 4 years’ experience in a high-volume hotel and restaurant required.
  • Minimum 2 years as a kitchen steward required.
  • Strong understanding of inventory management practices such as ABC analysis and cycle counting preferred.
  • High school diploma
  • Ability to handle multiple tasks and work well in environment with time constraints.
  • Detail-oriented, performing work accurately and efficiently.
  • Demonstrated excellent communication skills.
  • Strong computer skills with Microsoft Office (Word, Excel, PowerPoint) and inventory management software.
  • Good analytical and logistical thinking abilities.
  • Demonstrative collaboration and negotiation abilities.
  • Excellent time management and organizational skills.
